Acceptance sequence
  1. Load an existing canonical preparation ticket and record order/payment baseline.
  2. Route it to Kitchen and confirm one stable station-work identity.
  3. Retry the same route and confirm idempotent replay true with no duplicate.
  4. Bump the work. Confirm status bumped.
  5. Retry the exact bump action. Confirm replay true and identity unchanged.
  6. Recall the same work. Confirm status returns active with the same work ID.
  7. Confirm commerce invariant remains true throughout.
